Restaurant Remodel in Nokomis: A Complete Plumbing Rough-In Under the Building

A restaurant remodel that needed new plumbing from the ground up, including the piping that runs underneath the building.

One of our larger commercial projects this past month was a restaurant remodel in Nokomis. The project required a complete plumbing rough-in, along with new plumbing run underneath the building. Below are photos and video from the job site, plus a closer look at what a rough-in involves and why it matters for a restaurant.

What Is a Plumbing Rough-In?

A rough-in is the stage of a project where the plumbing system is installed before walls, floors, and fixtures are finished. It includes the drain lines, vent piping, and water supply lines that will eventually connect to every sink, toilet, and appliance. At this stage, pipes end at stub-outs, which are the short pipe connections left in place where fixtures will be installed later.

A complete rough-in means the plumbing is laid out for the new space as a whole. On a remodel, that matters because the new layout rarely matches the old one. Kitchens move, restrooms change size, and equipment needs drains and water in new locations.

Plumbing Under the Building

On this project, a large part of the work happened underneath the building. Running new piping below the floor lets the drain system reach each new fixture location and carry wastewater out to the main line. The photo below shows new piping in place under the building after installation.

Why the Rough-In Matters for a Restaurant

Restaurants put more demand on their plumbing than most buildings. Kitchens run sinks, dishwashers, and equipment for hours at a time, and restrooms see steady use from guests and staff. The rough-in sets the foundation for all of that. Getting drain slope, pipe sizing, and connections right at this stage helps the finished restaurant drain properly and avoid backups once it is open for business.

It is also much easier to get the plumbing right while everything is open. Once floors are finished and walls are closed, changes become more disruptive and more costly. That is why we treat the rough-in as one of the most important stages of any commercial remodel.
